Ingredients

2 medium zucchini (approx. 500–600 g)

1 cup rolled oats

2 large eggs

½ small onion, finely chopped

2 cloves garlic, minced

½ cup shredded mozzarella or cheddar cheese

2 tbsp fresh parsley, finely chopped

1 tbsp fresh dill, chopped

½ tsp salt

½ tsp black pepper

½ tsp paprika

½ tsp garlic powder
-
¼ tsp dried oregano
-
2 tbsp oat flour or all-purpose flour (if needed)

2–3 tbsp olive oil or cooking oil (for frying)
Instructions

Prep & Salt Zucchini: Grate the zucchini using the large holes of a box grater. Place it in a colander, toss with ½ teaspoon of salt, and let it sit for 10–15 minutes to draw out excess moisture.

Squeeze Dry: Wrap the grated zucchini in a clean kitchen towel or cheesecloth and squeeze vigorously to remove as much liquid as possible.

Combine Ingredients: In a large bowl, mix the squeezed zucchini, rolled oats, eggs, chopped onion, minced garlic, shredded cheese, parsley, dill, black pepper, paprika, garlic powder, and oregano until fully combined.

Rest the Mixture: Let the mixture sit for 10 minutes so the oats can absorb the remaining moisture and bind the ingredients together. If the mixture feels too wet to hold shape, stir in 2 tablespoons of flour.

Shape Patties: Divide the mixture into 12–14 portions and press them firmly into round, flat patties (about ½-inch thick).

Pan-Frying (Recommended): Heat 1–2 tablespoons of oil in a large non-stick skillet over medium heat. Fry the patties in batches for 4–5 minutes per side until deeply golden brown and cooked through. Add more oil as needed.

Baking Option: Place patties on a parchment-lined baking sheet, lightly spray or brush both sides with olive oil, and bake at 400°F (200°C) for 20–25 minutes, flipping halfway through.
